History

Avocado toast became the symbol of millennial breakfast culture in the 2010s. The dish originated in Australian cafes, where avocado toast was served as early as the 1990s. Today it is one of the most photographed breakfasts in the world.

Ingredients

Preparation

1Toast the bread until crispy.
2Cut the avocado in half, remove the pit. Mash the flesh with a fork and lemon juice.
3Spread the avocado mash on the toast, season with salt and pepper.
4Fry the eggs in olive oil (sunny-side up or poached).
5Place the eggs on top of the avocado toast, add halved cherry tomatoes.
6Sprinkle with chili flakes and serve immediately.

Tips

The avocado should be ripe — check by pressing gently. For the perfect poached egg, add vinegar to the water and create a whirlpool before dropping the egg in.
