History

Lobio is a Georgian dish made from red beans. The name simply translates as "beans." There are over 30 varieties of lobio. It is served with mchadi (corn flatbread) and fresh herbs.

Ingredients

Red beans300g
Onion2 pc
Garlic4 cloves
Cilantrobunch
Khmeli suneli1 tbsp
Vinegar1 tbsp

Preparation

1Soak beans overnight, boil until tender (1.5 hours).
2Mash some of the beans into a purée.
3Sauté onion until golden.
4Crush walnuts with garlic and cilantro.
5Mix beans, onion, and walnut paste together.
6Add khmeli-suneli and vinegar, simmer for 10 minutes.

⏱ Cook time: 2 hours

Tips

Don't salt beans at the start of cooking — they will stay tough.
