History
Eggplant rolls with walnut filling (badrijani) are a Georgian cold appetizer. Strips of fried eggplant are filled with a paste of walnuts, garlic, and herbs. One of the most elegant dishes in Georgian cuisine.
Ingredients

Vinegar1 tbsp
Pomegranatefor garnish
Preparation
1Slice the eggplants lengthwise into planks, salt for 20 minutes.
2Pat dry and fry until golden.
3Grind the walnuts with garlic, cilantro, and spices.
4Thin the paste with vinegar and water.
5Spread the filling on each plank and roll up.
6Garnish with pomegranate seeds.
