History
Vinaigrette is a Russian boiled vegetable salad from the 19th century. The name comes from the French "vinaigre" — vinegar. It is one of the few Russian dishes internationally recognized as healthy food.
Ingredients
Preparation
1Boil beets, potatoes, and carrots until done, let cool.
2Dice all vegetables into uniform small cubes.
3Chop pickled cucumbers and onion finely.
4Mix all ingredients with peas and sauerkraut.
5Dress with vegetable oil, add salt.
6Toss and refrigerate 30 minutes to let flavors meld.

Tips
Add beets last and drizzle with oil — this prevents staining other vegetables.
