History
Kharcho is a Georgian beef soup with rice, walnuts, and tklaphi (dried plum leather). Spicy, aromatic, with a sour kick. The name translates as "meat soup." One of the most popular Georgian soups in Russia.
Ingredients
Preparation
1Boil beef in large chunks (1 hour).
2Add rice to the broth.
3Sauté onion, add tomato paste and adjika.
4Crush the walnuts and add to the soup along with the sauté.
5Simmer for 15 minutes, add khmeli-suneli and garlic.
6Garnish with cilantro when serving.
