History
Bulgur is cracked wheat used in the Middle East 4,000 years ago. It became popular in Russia in the 2010s as a healthy rice alternative. Thanks to pre-steaming, it cooks very quickly.

Preparation
1Melt butter in a heavy-bottomed pot.
2Toast bulgur in butter for 2 minutes, stirring, until nutty aroma.
3Pour in hot water or broth.
4Bring to a boil, reduce heat.
5Cook covered 15 minutes until water is absorbed.
6Let rest 5 minutes, fluff with a fork.
