History
Vareniki are a national Ukrainian dish popular across the post-Soviet region. The name comes from the word "to boil." Potato filling with fried onion is the most classic version.
Ingredients
Flour400g
Water тёплая200ml
Egg1 pc
Potato5 pc
Onion2 pc
Сливочное масло30g
Saltto taste
Sour creamfor serving
Preparation
1Knead dough from flour, water, egg, and salt; rest 30 minutes.
2Boil potatoes, mash with butter.
3Fry finely diced onion until golden; add half to the mash.
4Roll out dough, cut circles, place filling.
5Pinch edges to form a crescent.
6Boil in salted water 5–7 minutes after they float.
7Serve with remaining fried onion and sour cream.
⏱ Cook time: 1.5 hours
Tips
Dough should be elastic — don't add too much flour.
You can freeze vareniki on a board in a single layer for later.
