History

Ingredients

Cream 20%200ml
Chicken broth500ml
Garlic2 cloves

Olive oil1 tbsp

Preparation

1Sauté onion and garlic in olive oil until soft.
2Add diced potatoes and broth, cook for 10 minutes.
3Add broccoli and cook for another 7-8 minutes until tender.
4Blend the soup with an immersion blender until smooth.
5Stir in cream, heat without boiling. Season with salt and pepper.

Tips

Do not overcook the broccoli — it will lose its color and vitamins. For an even silkier texture, strain the soup through a sieve.
