History
Shchi is an ancient Russian cabbage soup known since the 9th century. A folk saying goes: "Shchi and kasha are our food." Made with fresh or sauerkraut on a meat or meatless broth. Sour shchi made with sauerkraut was especially prized.
Ingredients
Preparation
1Make beef broth (1.5 hours).
2Add diced potatoes, cook for 10 minutes.
3Add shredded cabbage.
4Sauté onion and carrot with tomato paste, add to the soup.
5Simmer for 20 minutes, add bay leaves, salt, and pepper.
6Serve with sour cream.

For sour shchi, use sauerkraut instead of fresh cabbage.
