History
French onion soup is an ancient French dish made by the poor from available ingredients. The version with cheese and bread (gratinée) appeared in 18th-century Paris and quickly became a restaurant classic.

Сливочное масло50g
Бульон говяжий1 L
Белое вино100ml
Багет4 slices
Cheese грюйер100g
Тимьян2 веточки
Preparation
1Slice the onions into thin half-rings.
2Slowly cook the onions in butter on low heat for 30-40 minutes until deeply caramelized.
3Pour in wine and let it evaporate. Add broth and thyme.
4Simmer for 20 minutes. Ladle into oven-safe bowls.
5Top with a baguette slice, cover with cheese, and broil for 3-5 minutes.

Tips
Patience with caramelizing the onions is the key secret. Do not raise the heat — the onions should turn deep golden, not burnt.
