History

Carbonara appeared in Rome after World War II. One version says it was invented by Italian charcoal workers (carbonari); another says the recipe emerged under the influence of American soldiers who brought bacon and powdered eggs to Italy.

Ingredients

Spaghetti400g

Preparation

1Cook spaghetti al dente in salted water. Save a cup of pasta water.
2Dice the guanciale and fry until crispy on a dry skillet.
3Mix egg yolks with grated Parmesan and Pecorino.
4Drain the pasta, add it to the guanciale, and remove from heat.
5Pour in the egg mixture, toss quickly. Add pasta water for creaminess. Season generously with pepper.

Tips

The main secret is not to overheat the egg mixture, or you will get scrambled eggs. Remove the pan from heat before adding the sauce. Cream is never used in an authentic carbonara.
