History
Bliny are one of the oldest Russian dishes, a symbol of the sun and Maslenitsa (Pancake Week). They were made as a ritual food in pagan times. Traditionally baked on a cast-iron skillet greased with oil.
Preparation
1Beat eggs with sugar and salt.
2Add half the milk and the flour, mix until smooth.
3Pour in the remaining milk and oil. The batter should be thin.
4Heat the skillet and grease with oil.
5Pour a thin layer of batter, fry 1–2 minutes per side.
6Serve with jam, sour cream, honey, or a filling.
⏱ Cook time: 40 min
Tips
The first blin often sticks — the skillet needs to be fully heated.
For lacy bliny, add boiling water to the batter.
