History

Khachapuri is a national Georgian dish whose name means "curd bread." Each region of Georgia has its own version: Adjarian, Imeretian, and Megrelian. In 2019, khachapuri was added to Georgia's intangible cultural heritage list.

Ingredients

Flour400g
Kefir250ml
Eggs2 pc
Brynza150g

Baking soda0.5 tsp

Preparation

1Mix kefir, 1 egg, salt, and baking soda. Gradually add flour and knead a soft dough.
2Grate the suluguni and feta, mix with 1 egg for the filling.
3Divide the dough into 3 parts and roll each into a flat round.
4Place the filling in the center, pinch the edges closed, and roll flat again.
5Cook on a dry skillet for 3-4 minutes on each side.
6Brush the finished khachapuri with butter.

Tips

For Adjarian-style khachapuri, shape the dough into a boat, bake in the oven, and add an egg and butter to the center 2 minutes before it is done.
