History

Cauliflower was developed in the Mediterranean and reached Europe via Cyprus in the 12th century. Catherine the Great ordered it grown in imperial gardens. Today it is one of the most popular diet vegetables.

Ingredients

Preparation

1Break cauliflower into florets, rinse.
2Boil in salted water 5 minutes until parboiled.
3Drain and pat dry.
4Beat eggs with salt and pepper.
5Dip florets in egg, then in flour or breadcrumbs.
6Fry on medium heat until golden on all sides.
7Serve with garlic or sour cream sauce.

Tips

Don't overcook — cauliflower should retain some crunch.
For baked version, toss with oil and spices and roast at 200°C.
