History

Chocolate mousse (mousse au chocolat) is a gem of French pastry. The word mousse means "foam." The dessert became popular in Parisian restaurants in the 18th century.

Ingredients

Preparation

1Melt the chocolate over a water bath, let cool.
2Separate whites from yolks. Mix yolks into the chocolate.
3Whip cream to soft peaks.
4Beat egg whites with sugar and salt to stiff peaks.
5Gently fold cream and whites into the chocolate mixture. Pour into ramekins and chill for 3 hours.
