History

Banana pancakes are an American weekend breakfast classic. Pancakes in general date back to Ancient Greece (tagenias), but fluffy American-style pancakes took shape in the 18th century. The banana version became popular as a healthier alternative to the original.

Ingredients

Preparation

1Mash the bananas with a fork until smooth.
2Add eggs and milk, whisk together.
3Mix flour, baking powder, and cinnamon. Fold into the wet ingredients and stir until just combined.
4Heat a skillet over medium heat and grease with butter.
5Pour about 2 tablespoons of batter per pancake and cook for 2 minutes on each side until golden.
6Serve stacked with honey, fresh berries, and banana slices.

Tips

The riper the bananas (with brown spots), the sweeter and more fragrant the pancakes. For a gluten-free version, use oat flour. Flip when bubbles appear on the surface.
