History
Solyanka (formerly selyanka) is a thick Russian soup from the 15th century, known for its sour-salty flavor. Originally served as a vodka appetizer, it became a standalone restaurant dish in the 19th century.

Preparation
1Make beef broth (1.5 hours), dice the meat.
2Slice sausage and wieners into rounds, cut pickles into strips.
3Sauté onion until golden, add tomato paste, cook 3 minutes.
4Add meat, sausage, wieners, and pickles to the broth.
5Add the sautéed onion, capers, olives, and bay leaves.
6Simmer 15 minutes, let rest 20 minutes.
7Serve with a lemon slice and sour cream.
