History

Pelmeni came to Russian cuisine from the Urals, brought by Finno-Ugric peoples. The word "pelmeni" derives from the Udmurt "pelnyany" — bread ear. In Siberia, hundreds of pelmeni were frozen for winter and stored outdoors as a strategic food reserve.

Ingredients

Flour400g
Eggs1 pc
Water150ml
Pork-beef mince500g
Onion2 pc
Salt, pepperto taste

Preparation

1Knead dough from flour, egg, water, and salt. Rest for 30 minutes.
2Make the filling: mix ground meat with finely chopped onion, salt, and pepper.
3Roll the dough thin, cut circles with a glass.
4Place filling in the center, pinch the edges, join the corners.
5Boil in salted water for 7–10 minutes after they float.
6Serve with sour cream, butter, or vinegar.

⏱ Cook time: 1.5 hours

Tips

The dough should be firm and elastic.
Freeze in a single layer on a board, then transfer to a bag.
