History

Beef liver is one of the most nutritious organ meats, rich in iron and vitamin B12. In old Russia, liver was valued alongside meat. Properly cooked beef liver should be soft and juicy.

Sour cream3 tbsp

Flour3 tbsp

Milk200ml

Vegetable oil3 tbsp

Preparation

1Soak liver in milk for 1 hour to tenderize.

2Slice liver into 1 cm pieces, remove membranes and ducts.

3Dredge in flour, sear on high heat 1.5 minutes per side.

4Fry onion half-rings until translucent.

5Combine liver with onion, add sour cream and a little water.

6Braise covered 15 minutes on medium heat.

7Serve with mashed potatoes.
