History

Khachapuri is a Georgian cheese-filled bread, a symbol of Georgian cuisine. The name translates as "bread with curd." There are over 50 regional variations. Adjarian khachapuri — boat-shaped with an egg — is the most famous.

Ingredients

Flour400g
Kefir250ml
Eggs2 pc
Brynza200g
Butter50g
Saltto taste

Preparation

1Knead dough from flour, kefir, egg, and salt.
2Grate the cheeses and mix with an egg.
3Roll the dough into an oval, add the filling.
4For Adjarian style: pinch the edges into a boat shape, leaving the center open.
5Bake at 220°C for 15 minutes.
6Remove, crack an egg into the center, return to the oven for 3 minutes.
7Top with a pat of butter. Serve hot.

The cheese should be stretchy — a mix of suluguni and brynza is ideal.
