History

Tom kha gai is a Thai coconut soup, one of the pillars of Thai cuisine alongside Tom Yum. The combination of coconut, galangal, and lemongrass is the signature aromatic trio of Thai cooking.

Ingredients

Chicken fillet300g
Coconut milk400ml

Lemongrass2 stalks
Fish sauce2 tbsp
Lime1 pc
Chili pepper1 pc

Preparation

1Slice the chicken into thin strips and the mushrooms into slices.
2Heat coconut milk with sliced galangal and lemongrass.
3Add the chicken and cook for 5 minutes.
4Add mushrooms, fish sauce, and chili. Cook for 3 minutes.
5Squeeze in lime juice, stir, and serve.

Tips

Lemongrass and galangal are not meant to be eaten — they flavor the broth. Coconut milk should not boil or it will separate.
