History

Borsch is a centuries-old dish rooted in Slavic cuisine. The earliest mentions of beetroot soups date back to the 14th century. The name comes from the hogweed plant originally used in its preparation. Over time, beetroot became the star ingredient, while cabbage and meat turned it into a hearty meal.

Ingredients

Beetroot2 medium
White cabbage300g
Potato3 pc
Carrot1 pc
Onion1 pc
Tomato paste2 tbsp
Garlic3 cloves
Vinegar 9%1 tbsp
Bay leaf2 pc
Vegetable oil2 tbsp

Preparation

1Make beef broth (1.5–2 hours), skimming foam. Salt at the end.
2Grate the beetroot and sauté with vinegar and tomato paste for 10 minutes.
3Dice the onion, grate the carrot. Sauté until golden.
4Add diced potatoes to the broth; after 10 minutes, add shredded cabbage.
5Add the sautéed vegetables and beetroot. Simmer for 15 minutes.
6Add garlic, bay leaves, and pepper. Let rest for 30 minutes.
7Serve with sour cream and fresh herbs.

Tips

Vinegar preserves the bright color of beetroot.
Borsch tastes even better the next day.
For a meatless version, use mushroom broth and beans instead of meat.
