History
Bliny are one of Russia's oldest dishes, a symbol of the sun and Maslenitsa. Made as ritual food in pagan times. Traditionally baked on cast-iron skillets.
Preparation
1Beat eggs with sugar and salt.
2Add half the milk and flour, mix until smooth.
3Pour in remaining milk and oil, batter should be thin.
4Heat skillet, grease with oil.
5Pour a thin layer of batter, tilting the pan.
6Fry 1–2 minutes per side.
7Serve with jam, sour cream, honey, or a filling.

Tips
The first blin often sticks — the skillet needs to fully heat up.
For lacy bliny, add 50 ml of boiling water to the batter.
