History
Ukha is one of Russia's oldest fish soups, known since the 12th century. Originally "ukha" meant any broth, but by the 17th century it became exclusively a fish soup. Authentic ukha is made from fresh river fish, often over a campfire.
Ingredients
Preparation
1Clean the fish, fillet it. Boil heads and tails for 30 minutes to make stock.
2Strain the broth through cheesecloth for clarity.
3Add diced potatoes and sliced carrots.
4After 10 minutes add a whole onion and fish fillet pieces.
5Simmer on low heat for 15 minutes — the fish should not overcook.
6Add bay leaves, peppercorns, and salt.
7Serve garnished with fresh dill.
