History
Tom Yum is a Thai hot and sour soup, one of the most famous in the world. The name means "boil" (tom) and "mix" (yum). The base is a broth infused with lemongrass, galangal, kaffir lime leaves, and chili peppers.
Ingredients
Preparation
1Bring 700 ml of water to a boil with lemongrass and chili.
2Add the mushrooms, cook for 5 minutes.
3Stir in the Tom Yum paste and fish sauce.
4Add the shrimp, cook for 3 minutes.
5Pour in the coconut milk and heat through.
6Remove from heat and add lime juice.

Do not boil after adding coconut milk — it will separate.
