History
Bruschetta is an Italian appetizer that appeared in central Italy in the 15th century. Originally it was simply toasted bread rubbed with garlic and drizzled with oil — a way to use stale bread. The tomato version became popular after tomatoes spread through Europe.
Ingredients

Preparation
1Slice the bread 1.5 cm thick and toast on a grill or in a toaster.
2Dice the tomatoes into small cubes, removing the seeds.
3Toss the tomatoes with chopped basil, olive oil, and balsamic vinegar.
4Rub the toasted bread with a cut clove of garlic.
5Spoon the tomato mixture onto the bread and top with pieces of mozzarella.
6Drizzle with olive oil and serve immediately.

Tips
Use only ripe, fragrant tomatoes — winter ones will not do. The bread must be crispy and the topping at room temperature. Do not assemble in advance or the bread will get soggy.
