History

The salad was invented by restaurateur Caesar Cardini in Tijuana, Mexico, in 1924. Originally, guests tossed the ingredients themselves at the table. The classic recipe does not include chicken — that was added later.

Ingredients

Romaine lettuce1 head
White bread2 slices
Egg1 pc
Garlic2 cloves
Olive oil4 tbsp
Lemon juice2 tbsp
Anchovies3 pc (optional)
Salt, pepperto taste

Preparation

1Grill or pan-fry the chicken, slice into strips.
2Cube the bread, fry with garlic and oil until crunchy — these are croutons.
3Tear the lettuce into large pieces by hand.
4Make the dressing: whisk together oil, lemon juice, egg, anchovies, and garlic.
5Toss lettuce, chicken, and croutons, drizzle with dressing.
6Top with grated parmesan.

Tips

Romaine can be swapped for iceberg, but the texture will differ.
For safety, pasteurize the egg: dip in boiling water for 1 minute.
