History

Rassolnik is a Russian soup made with meat broth, pickled cucumbers, and pearl barley. Known since the 15th century under the name "kalya." Its tangy flavor comes from pickle brine. Pearl barley is a must.

Ingredients

Beef300g
Pearl barley100g
Pickled cucumbers3 pc
Potato3 pc
Carrot1 pc
Onion1 pc
Pickle brine100ml
Salt, pepperto taste

Preparation

1Soak the pearl barley for 2 hours, then par-cook.
2Make a meat broth.
3Add potatoes and pearl barley.
4Sauté onion and carrot, add chopped pickles, and simmer for 5 minutes.
5Add the sauté to the soup, pour in the brine.
6Simmer for 15 minutes, adjust salt.

⏱ Cook time: 2 hours

Tips

Add the brine at the end — otherwise the potatoes will stay tough.
