History
Bolognese is an Italian meat sauce from the city of Bologna. The official recipe was registered by the Italian Academy of Cuisine in 1982. True bolognese is slow-cooked — the meat simmers in sauce for 2–3 hours.
Ingredients
Preparation
1Sauté onion, carrot, and garlic in olive oil.
2Add the ground beef, cook until no longer pink.
3Pour in the wine, let it reduce for 2 minutes.
4Add tomatoes, salt, pepper, and basil.
5Simmer on low heat for 40–60 minutes.
6Cook pasta al dente, serve with sauce and parmesan.
⏱ Cook time: 1.5 hours
Tips
Long, slow simmering makes the sauce thick and full-bodied.
