History
Ginger tea is an ancient remedy in Ayurvedic and Chinese medicine, used for over 5000 years to boost immunity and improve digestion. In Russia, it became popular as a cold remedy.
Preparation
1Peel and slice the ginger thinly.
2Boil the water and pour over the ginger. Add the cinnamon stick.
3Steep for 10 minutes.
4Strain, add lemon juice and mint.
5When the tea cools to 60°C, stir in the honey.

Tips
Add honey only to cooled tea (below 60°C) — at high temperatures it loses its beneficial properties. The longer the ginger steeps, the spicier the drink.
