History

Caesar salad was invented in 1924 by Caesar Cardini, an Italian restaurateur in Tijuana, Mexico. The original contained neither chicken nor anchovies — those were added later.

Ingredients

Shrimp300g
Romaine lettuce1 head
Parmesan50g
White bread2 slices
Garlic1 clove
Anchovies3 pc
Olive oil4 tbsp
Lemon juice1 tbsp

Preparation

1Make croutons: cube the bread and fry with garlic in oil.
2Sear the shrimp on high heat for 2 minutes on each side.
3Make the dressing: mash anchovies with garlic, add oil and lemon.
4Tear the romaine lettuce by hand and drizzle with dressing.
5Top with shrimp, croutons, and Parmesan shavings.

Tips

Authentic Caesar contains anchovies in the dressing — they provide umami flavor. Romaine can be substituted with iceberg, but romaine is more authentic.
