History
Okroshka is a cold soup from Russian cuisine, the perfect dish for a hot summer day. The name comes from the word "kroshit" — to crumble. Traditionally made with kvass, though a kefir version is also popular. Known since the 18th century.
Ingredients
Kvass1 L
Boiled potato3 pc
Boiled eggs3 pc
Fresh cucumbers2 pc
Radish5 pc
Boiled sausage200g
Green onionbunch
Dillbunch
Sour cream3 tbsp
Salt, mustardto taste
Preparation
1Boil potatoes and eggs, let cool.
2Dice all ingredients into small cubes.
3Finely chop the herbs.
4Combine everything in a pot, add salt.
5Pour cold kvass over the top, stir in sour cream and mustard.
6Serve immediately, very cold.

Tips
You can use boiled beef instead of bologna.
With kefir, the taste is tangier and more delicate.
