History

Kholodets (aspic) is an ancient Russian dish made from set meat broth. It has been prepared since the 16th century. No gelatin is added — the broth sets on its own thanks to collagen from cartilage and bones. A traditional festive dish.

Ingredients

Pork trotters2 pc
Beef500g
Chicken500g
Onion2 pc
Carrot2 pc
Garlic1 head
Bay leaf3 pc
Peppercorns10 pc
Saltto taste

Preparation

1Cover meat with cold water (4 liters), bring to a boil, discard the first water.
2Add fresh water, simmer for 6–8 hours on the lowest heat.
3Add whole onion and carrot, bay leaf, and peppercorns an hour before the end.
4Remove meat, separate from bones, and chop.
5Strain broth, add garlic.
6Arrange meat in molds, pour broth over it.
7Cool and refrigerate for 6–8 hours.

⏱ Cook time: 8 hours + setting

Tips

Cook on the lowest heat — the broth should barely bubble, not boil.
Pig trotters provide the gelatin — without them the aspic won't set.
