History
Curry is a broad term for a whole class of spiced sauce dishes found across South and Southeast Asia. The word comes from the Tamil "kari" (sauce). The British introduced curry to world cuisine in the 18th century.

Preparation
1Sauté chopped onion, garlic, and ginger until soft.
2Add curry powder and fry for 1 minute until fragrant.
3Add the chicken pieces and cook until white on all sides.
4Pour in coconut milk, add diced tomatoes and potatoes.
5Cover and simmer for 30 minutes until the chicken and potatoes are cooked through.
6Serve with basmati rice, garnished with cilantro.

Tips
For a deeper flavor, fry whole spices (cardamom, cinnamon, cloves) before adding the onion. Coconut milk can be replaced with heavy cream.
