History

Satsivi is a Georgian dish of chicken in walnut sauce. It is served cold, which is unusual for meat dishes. The name comes from the Georgian word "sitsiva" meaning cold. Traditionally prepared for New Year.

Ingredients

Chicken1 pc
Onion3 pc
Garlic5 cloves
Cilantrolarge bunch
Khmeli suneli1 tbsp
Saffron1/4 tsp
Vinegar1 tbsp

Preparation

1Boil the chicken until done. Save the broth.
2Cut the chicken into pieces and pan-fry until golden.
3Grind the walnuts with garlic, cilantro, and spices into a paste.
4Thin the paste with broth to a sour-cream consistency.
5Pour the walnut sauce over the chicken.
6Cool and refrigerate for 4-6 hours.
