History

Kotlety are one of the most popular homemade dishes in Russia. The word came from French — côtelette (cutlet). Russian ground-meat kotlety have nothing in common with the French original, but they became a national staple.

Ingredients

Chicken mince500g
White bread2 slices
Milk100ml
Onion1 pc
Egg1 pc
Salt, pepperto taste
Oilfor frying

Preparation

1Soak the bread in milk for 5 minutes.
2Put the onion through a meat grinder or dice finely.
3Mix ground chicken, bread, onion, egg, salt, and pepper.
4Shape the patties with wet hands.
5Dredge in flour or breadcrumbs.
6Fry over medium heat for 5–6 minutes per side.

Tips

Milk-soaked bread keeps the kotlety juicy.
For a lighter version, bake in the oven at 180°C for 25 minutes.
