History
Carbonara is a Roman dish that emerged in the mid-20th century. The name is linked to charcoal burners (carbonari) who cooked pasta over coals. Authentic carbonara contains no cream — only eggs, pecorino, and guanciale.

1Cook pasta al dente in salted water.
2Cut guanciale into cubes and fry until crispy (no oil needed — fat will render out).
3Mix yolks with grated cheese and pepper.
4Drain pasta, reserving 100 ml of water.
5Quickly toss hot pasta with the egg mixture — eggs must not scramble.
6Add guanciale and a splash of pasta water for creaminess.
