History

Mushroom soup is one of the oldest dishes of forest-dwelling peoples. In Russia, mushrooms have been foraged for centuries to make rich soups. Porcini and chanterelles were especially prized, and dried mushrooms gave the soup a unique aroma.

Ingredients

Mushrooms300g
Potato3 pc
Onion1 pc
Carrot1 pc
Cream 20%100ml
Сливочное масло30g
Garlic2 cloves
Salt, pepperto taste

Preparation

1Slice mushrooms and sauté in butter until golden.
2Separately sauté onion and carrot until soft.
3Boil water, add diced potatoes, cook 10 minutes.
4Add mushrooms and sautéed vegetables, cook 10 more minutes.
5Pour in cream, add minced garlic.
6Season with salt and pepper, bring to a boil and remove from heat.
7Serve with herbs and croutons.

Tips

Add a couple of dried porcini — the aroma will be richer.
For cream soup, blend before adding cream.
