History
Stuffed peppers are popular in Mediterranean and Eastern European cuisines. They came to Russia via Balkan and Moldovan cooking in the 20th century. A rice and meat filling is the classic Russian version.
Ingredients
Bell pepper6 pc
Pork-beef mince400g
Rice100g
Onion1 pc
Carrot1 pc
Tomato paste2 tbsp
Sour cream3 tbsp
Salt, pepperto taste
Preparation
1Parboil rice, mix with ground meat, finely diced onion, salt, and pepper.
2Cut tops off peppers, remove seeds.
3Stuff peppers, place upright in a pot.
4Sauté carrot with tomato paste, add sour cream and water.
5Pour sauce over peppers, cover with lid.
6Braise on low heat for 40 minutes.
7Serve with sour cream and herbs.
⏱ Cook time: 1 hours
Tips
Choose peppers of similar size for even cooking.
Don't fully cook the rice — it will finish during braising.
