History
Ukha is a traditional Russian fish soup known since the 12th century. Originally "ukha" referred to any broth, but by the 17th century the word became reserved for fish soup. Authentic ukha is made from fresh river fish over a campfire.

Preparation
1Clean the fish. Boil heads and tails for 30 minutes for stock, then strain.
2Add potatoes and carrot to the broth.
3After 10 minutes, add a whole onion and fish pieces.
4Simmer for 15 minutes. Add bay leaves, peppercorns, and salt.
5Garnish with dill when serving.
