History
Pho bo is the national dish of Vietnam, originating in early 20th-century Hanoi. It is believed that French colonial cuisine (pot-au-feu) and the Chinese tradition of noodle soups influenced the recipe.

Preparation
1Char the onion and ginger on a dry skillet until blackened.
2Make beef broth (2 hours), add the charred onion, ginger, and star anise.
3Strain the broth and add fish sauce.
4Cook rice noodles per instructions, divide among bowls.
5Slice the beef thinly, pour hot broth over it. Serve with lime and green onion.
