History

Hummus is a Middle Eastern chickpea paste known since the 13th century, mentioned in Arabic cookbooks. It became popular in Russia in the 2010s as a healthy snack and part of the Mediterranean diet.

Ingredients

Preparation

1Soak chickpeas 8–12 hours, drain.
2Boil chickpeas 1–1.5 hours until tender.
3Transfer to blender, add tahini, lemon juice, garlic, cumin, and salt.
4Blend until smooth, adding cooking water for desired consistency.
5Spread on a plate, make a well in the center.
6Drizzle with olive oil, sprinkle with paprika.

Tips

You can peel chickpea skins for a smoother texture.
Tahini can be replaced with peanut butter in a pinch.
