History
Halva is an Eastern confection known since the 5th century BC in Iran. It reached Russia through Central Asia. Many varieties exist: sunflower, tahini, peanut. Sunflower halva is the most popular in Russia.

Preparation
1Toast sunflower seeds in a dry pan until lightly golden.
2Grind seeds in a blender to a paste.
3Toast flour in a dry pan until cream-colored with a nutty aroma.
4Make syrup: boil sugar with water for 5 minutes.
5Mix seed paste, flour, oil, and hot syrup.
6Press into a mold, compact, refrigerate 3 hours.

Tips
Don't over-toast seeds — halva will taste bitter.
For tahini halva, replace seeds with sesame paste.
