History
Pearl barley porridge is a traditional Russian grain made from barley. Peter the Great called pearl barley the "queen of porridges." The name comes from "pearl" — the grains resemble pearls. With meat, it becomes a hearty army-style dish.
Preparation
1Soak the pearl barley for 2 hours.
2Cube the meat and sear until browned.
3Add the onion and carrot, fry for 5 minutes.
4Add the barley and cover with water by two finger-widths.
5Simmer covered for 40-50 minutes until the grain is tender.
