History
Draniki are Belarusian potato pancakes that became popular all across Russia. The name comes from the word "drat" — to grate. A simple peasant dish made from potatoes, ready in 20 minutes.
Ingredients
Preparation
1Grate the potatoes finely, squeeze out excess liquid.
2Grate the onion and add to the potatoes.
3Add egg, flour, salt, and pepper.
4Drop spoonfuls onto a hot oiled skillet.
5Fry 3–4 minutes per side until crispy.
6Serve hot with sour cream.

Tips
Squeeze the potatoes well — otherwise the draniki will be soggy.
Fry on a very hot skillet for a crispy crust.
