History

Pumpkin porridge is a traditional Slavic dish, especially popular in Ukraine and Russia. Pumpkin was used in porridges since the 16th century when it arrived in Europe from America. The dish is associated with home comfort and rustic cooking.

Ingredients

Rice круглозёрный150g
Pumpkin300g
Milk500ml
Sugar2 tbsp
Сливочное масло30g
Saltpinch
Vanilla sugar1 tsp

Preparation

1Cut the pumpkin into cubes and boil in water for 10 minutes until soft.
2Rinse the rice and add it to the pumpkin.
3Pour in hot milk, add sugar and salt.
4Simmer on low heat for 25-30 minutes, stirring occasionally.
5Add butter and vanilla sugar, stir, and let it rest for 10 minutes.

Tips

The pumpkin can be mashed for a smooth porridge or left in chunks. Short-grain rice makes the porridge more creamy and thick.
