History
Shashlik is a Caucasian dish that has become inseparable from Russian outdoor culture. The word comes from the Turkic "shish" — skewer. Traditionally made with lamb, though pork is more popular in Russia.

Vinegar or lemon2 tbsp

Preparation
1Cut the meat into 4–5 cm pieces.
2Slice the onion into rings and squeeze by hand to release juice.
3Mix the meat with onion, vinegar, and spices.
4Marinate for 4–12 hours in the fridge.
5Thread onto skewers, alternating meat and onion.
6Grill over coals for 15–20 minutes, turning every 3–4 minutes.

Tips
The best cut of pork for shashlik is the neck — moderately fatty and juicy.
The coals should be ash-gray with no flames — otherwise the meat will char on the outside.
