History

Donuts exist in some form in every culinary tradition. The American donut with a hole was invented in the 19th century. In Russia, "pyshki" are deep-fried and dusted with powdered sugar.

Ingredients

Flour400g

Eggs2 pc
Sugar3 tbsp

Preparation

1Dissolve yeast in warm milk with 1 tbsp sugar, let stand 10 minutes.
2Mix flour, sugar, salt. Add yeast milk, eggs, and melted butter.
3Knead soft dough, cover and let rise 1 hour.
4Roll dough 1.5 cm thick, cut rings with a glass.
5Let proof 20 minutes.
6Deep-fry at 170°C for 2 minutes per side.
7Dust with powdered sugar or drizzle with glaze.

Tips

Oil temperature is key: too hot and they burn, too cool and they absorb grease.
Fry the center holes too — you get mini donuts.
